Inspector's notes

-- Multiple items such as boneless chicken, seasoned waffle fries, regular French fries, and onion strings on lower shelf of reach-in freezer were softened with an internal temperature of 34°F using probing thermometer. Other frozen items on top half of freezer were maintained frozen solid. The PIC stated the refrigerator may have been left partially opened during food prep causing temperatures to rise. The PIC stated they will monitor freezer to ensure it maintains frozen temperatures. Stored frozen foods shall be maintained frozen unless in the process of slacking or thawing. Corrective Action: Correct prior to next routine inspection.

Observed significant harborage of drain and fruit flies throughout the kitchen and in the bar area. The person in charge provided the most recent pest control reports from March 2026 stating fruit flies are actively being targeted. The person in charge also called their technician to schedule for service at the time of inspection. Provided additional recommendations to reduce the attraction of pests: - Limit standing water - Inspect shipments of food - Sealing food in containers - Repair plumbing leaks - Eliminating cardboard clutter/ remove food from original cardboard packaging - Sealing open spaces in floors, walls, and ceiling - Maintain a clean and sanitary facility Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Cole slaw, salsa, and sour cream on expo-line found with internal temperatures of 50-52*F; temperatures verified with PIC's and inspector's calibrated probe thermometers. PIC discovered the expo-line had been turned off. The expo-line had last been checked at 1:30 PM and was at appropriate temperature below 41*F. PIC moved the food items to the walk-in for cooling. PIC turned the expo-line back on. The expo-line will be monitored and ensure it is able to maintain food items at 41*F or below before items are returned. Please ensure cold held TCS food items are maintained at 41*F or below. Corrective Action: Corrected at time of inspection.
