Inspector's notes

Observed an employee at the dishwasher handle dirty dishes then put away cleaned dishes without washing their hands before changing tasks. Observed the same employee interact with the pre-rinse and wash compartment 3 comp spray head before handing cleaned dishes to be put away. Also observed an employee begin putting away cleaned dishes at the start of their shift without washing their hands first. PIC confirmed with the employee that they had not washed their hands but resumed putting away the cleaned dishes without washing their hands first. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

No paper towels observed at the hand sink between the fryers near the sandwich assembly area. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Contacted the catering coordinator, Sheila, to check on status of correction. Per Sheila, the establishment will clean inside and outside of the delivery bags daily. Bags will be checked by lead at the beginning of each day to ensure staff clean them at the end of the day. Manager will provide test reports for testable backflow preventers to inspector. Food Processor, class 4OC inspection was conducted with the catering coordinator, Sheila. The establishment is open and operating at the time of inspection. Discussed with coordinator about the food service type and the facility fits the food processor type than a food catering permit. Will change the permit type from food catering to food processor permit.Manager is a certified food protection manager. The person in charge must be a certified food protection manager and presence at the site at all operational hours.Food handlers must have food handlers’ and all food handlers and managers’ certifications and available at site for inspection purpose.Permit is approved.
