Cooked potatoes, sausage, and eggs-52-53F cooling in tightly covered containers in the walk in cooler. PIC stated that all items had began cooling a little over 4 hours prior and uncovered. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be arranged in the equipment to provide maximum heat transfer through the container walls; and loosely covered, or uncovered if protected from overhead contamination, during the cooling period to facilitate heat transfer from the surface of the food. On top two racks were salads prepared on 8/3 at 45*-46*F. Notified Person In Charge (PIC). PIC will place work order to repair unit. PRIORITY VIOLATION-5-205.15 (A), P: System Maintained in Good Repair; According to Law 1) Provide an approved mop sink. Mop sink must have hot and cold water through a mixing faucet with approved backflow (atmospheric vacuum breaker). Mop sink must also drain to the sewer. Chemical dispensers cannot be connected to mop sink faucets. Also provide approved finishes such as an FRP backsplash. Mop sink may be installed next to 3-compartment sink; however, depending on height of installing sink and faucet, a splash guard may be required. 2) Install an RPZ (ASSE 1013, such as a Watts 009) on all water lines to reverse osmosis filtration systems (memory care, library). Plumb the drain line from the vent indirectly to the sewer. Also plumb the drain line from the waste of the RO indirectly to the sewer, such as through a hub drain. Otherwise, remove RO systems. 3) Install a testable double check assembly (ASSE 1015 such as a Watts 007) on water line to Cleveland Steamer. 4) Install an ASSE 1022 in-line dual check on water line to coffee machine (coffee cannot share the same backflow as juice machines). 5) Re-plumb or secure water lines so they are off the floor (beverage area, prep sinks). 6) Re-plumb drain lines for prep sinks, beverage hand sink, steam table, and Cleveland Steamer so that they are hard-piped (steam table), sloped to drain, with minimum 1” air gaps at floor sinks and otherwise kept off the floor as much as possible for cleaning. Use Unistrut or similar for supports. 7) Remove any unnecessary water lines (former prep sink area). 8) Have all testable backflow tested and passed (any newly installed and existing behind juice machines). Maintain certificates on site for verification. 9) Determine purpose of flex line coming through ceiling at dish machine. Secure and keep off floor/out of floor sink.
