Observed multiple TCS food items above 41*F in pizza and salad prep table. Person in charge stated unit and food were 40*F at 10am when establishment opened. Observed pizza sauce and cheese have an internal temperature of 46*F, cut chicken 51*F, ham 51*F, beef sausage 47*F, cut lettuce 48*F, cut tomato 49*F, feta cheese 48*F. Bottom part of the unit held nacho cheese with internal temp of 47*F and large containers of pizza sauce with temp of 47*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
