Observed the following food items in the walk in refrigerator holding 49-51F: steak, turkey, ham, provolone cheese, cheddar cheese, swiss cheese, butter, shredded lettuce and ranch. Staff stated that they did not take any temperatures today or write down any temperatures. Staff does not keep temperature logs. Discussed probing the core temperatures of the food items when cold holding to make sure the products hold 41F or below. The items were discarded. Corrective Action: Corrected at time of inspection.
