Inspector's notes

Observed large container of chile verde stored in upright reach-in freezer with an internal temperature of 63*F. According to PIC, chile verde had been previously frozen and was thawed at room temperature for a prolonged period of time before moving to freezer to rapidly chill. Discussed approved methods for thawing. Also observed chile verde, red salda and refried beans in upright reach-in cooler with an internal temperature of 48-52*f. Chiles rellenos had been previously cooked and placed in reach-in cooler to rapidly chill. Due to limited space in reach-in cooler, a discussion was had regarding using freezer to rapidly cool foods or using ice baths methods to decrease temperature prior to placing in reach-in cooler and potentially causing temperature on other TCS foods to increase above 41*F. Cold holding equipment was holding ambient air temperature of 40-41*F in various parts of unit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
