Inspector's notes

Observed no hot water availability at time of inspection in employee handwash sink near the cook line. Max temp reading 68°F. After alerting the owner he explained that he turned off the hot water due to a leak on the faucet when the hot water was turned on. Hot water of: 100°F is required at all handwash sinks; 110°F at all other sinks; 120°F at mechanical warewashing units sanitizing with chemicals; and 140°F at mechanical warewashing units sanitizing with high temperature. PIC was able to turn on hot water reaching temperatures of 110°F+. Repair sink so hot water is maintained in good repair at the faucet. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cookline open top unit holding pepperoni, sausage, lettuce, tomatoes, and mushrooms (items for both E&D permit and production permit) with internal temperatures of 51°F. The ambient temperature of the unit was 51'F as well. Per PIC all these items were prepped and put in the unit 30 minutes ago. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Please refrain from using this unit to cold hold TCS foods until serviced to cold hold at 41°F or below. Corrective Action: Corrected at time of inspection.
