Observed a large metal pot of soup at 120*F after 20 minutes of cooling in a small reach in unit. Unit was small and not designed for cooling. Soup was moved to larger reach in to help it cool quicker. Observed a container of spicy ground tuna at 68*F in the prep table. Prep tables are not designed to cool foods. Once foods are prepared, they should be cooled rapidly prior to being placed in prep units for use. Tuna was moved to freezer to rapidly cool prior to returning it to the prep line.

Inspector's notes
In the northernmost prep cooler, observed various TCS foods between 48-52*F. Foods included raw and cooked shrimp, imitation crab, raw salmon and tuna, soft shell crab, and cooked eel. All foods were out of temperature for approximately 3 hours. Foods were moved to another cooler to cool. Until unit is holding below 41*F all TCS foods must be stored in other coolers. Establishment has sufficient space in additional coolers to perform necessary tasks to operate.

Observed sanitizer bucket located on cook line test at 0ppm of Quaternary Ammonia sanitizer. PIC emptied bucket and added new Quaternary Ammonia sanitizer testing at 200ppm at time of inspection. Provide a reduced pressure zone assembly at the water connection point of the self-cleaning wok station. Provide a drain cup for the vent port of the device. Drainpipe must be rigid and indirectly discharge to the nearest floor sink. Certify all testable backflow devices (RPZs of the wok station and of the soda's carbonator) and provide reports.
