Observed several dishes that were stored as clean at the clean dishes rack. Upon separating some of the dishes, food residues were observed still stuck inside of a couple of pans. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Inspector's notes
Observed a large 5-gallon bucket of pinto beans that were in the walk-in cooler. The internal temperature of the bucket of beans as measured using a probe thermometer ranged from 50°F - 52°F. According to the person in charge, the beans had been cooked and then cooled the night prior first in the freezer and then transferred to the walk-in cooler at some point. Based on the cooling parameters of cooling TCS foods from 135°F to 70°F within the first 2 hours and then from 70°F to 41°F within the next 4 hours for a total cooling period not to exceed 6 hours, the food did not achieve the final cooling temperature of 41°F within the allotted time. The bucket of beans was embargoed at time of inspection (see embargo form). Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.

Observed some moderately sized holes in the walls near the mesquite grill in the kitchen. In their current condition they are not smooth, durable or easily cleanable. Discussed with person in charge to repair the wall so that it is smooth, durable and easily cleanable. The person in charge will have the wall repaired. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection. Observed cooked birria measuring at an internal temperature of 44-47°F. Discussed with PIC regarding when birria was made and it was made the afternoon before. Discussed with PIC that Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. All TCS foods improperly cooled were discarded by PIC at time of inspection. Discussed proper cooling guidelines and improvements like spreading food evenly across the containers and mixing TCS foods when made in big portions. PRIORITY VIOLATION-3-501.14 - Priority: Cooling. Observed cooked beans in a five-gallon bucket in the walk-in fridge measuring at a temperature of 49-51° F with probe thermometer. PIC said that cooked pinto beans were made yesterday. Discussed with PIC that cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Discussed with PIC alternative methods for proper cooling like smaller portions and smaller containers. TCS foods must be cooled in uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Area will be closed off until approval.This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2.
