Crab salad-59F in the reach in cooler behind the front serving line area. PIC voluntarily discarded-see embargo form. Milk items-44-45F in the reach in cooler in the cafeteria area. PIC stated that the milk items were recently placed into the unit and relocated to the walk in cooler. Ensure that TCS foods are maintained at 41F or below. *The AC was not working in the kitchen and cafeteria area likely contributing to the violation. Ambient temperature of the rooms was 89-91F. Discussed with the PIC about potentially utilizing ice and keeping less TCS food in the reach in coolers if possible until the AC is repaired. Corrective Action: Corrected at time of inspection.
