#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed various styles of hot dogs and rolled tacos with internal temperatures ranging from 45-50*F when measured with a probe thermometer. Observed the opened foods stored on the wire rack immediately inside the walk in cooler door where the air temperature was observed at 49*F with a min/max thermometer. Observed the cooler door propped open. Per PIC, the doors had been opened most of the morning to receive product. PIC stated all foods had been in the cooler longer than 4 hours. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Advised PIC to store TCS foods deeper within the walk in cooler where ambient air temperatures were observed between 35-38*F. Corrective Action: Corrected at time of inspection.
