Hands must be washed after handling dirty dishes before handling cleaned and sanitized dishes. Dishwasher washed hands for 20 seconds at the time of inspection before continuing to put away clean dishes. Corrective Action: Corrected at time of inspection.

Observed dust, grease, and food debris on multiple dishes, utensils, and bowls being stored as clean throughout the kitchen. Also observed dirty absorbent rags in contact with clean and sanitized dishes. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. All food-contact surfaces must be cleaned to sight and touch. Observed cooked pinto beans with a preparation date of 1/31 located in the walk-in cooler. Discussed date marking procedures with the PIC. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection.
