Inspector's notes

Observed cut tomatoes, pico de gallo, raw chicken, cheese, guacamole (with tomatoes), sour cream, and salsa with an internal temperature of 65F. Per PIC, the food were either prepare today or pulled from the freezer to thaw. Had PIC moved items to the two door reach-in cooler and put on ice for rapid cooling. Observe salsa with an internal temperature of 52F, being stored in the one door reach-in cooler. Per PIC, the salsa was made last night. The salsa was discarded at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes

At time of inspection, observed the only prep table in the establishment with a minimum ambient air temperature 65.7F, maintaining TCS foods above 41F at time of inspection. After waiting 30-45 minutes, the prep table was able to get down to 51.9F. The establishment's walk-in has not been in operation since April, and the establishment only has 1 one door reach-in cooler, 1 two door reach-in freezer, and 1 two door reach-in cooler to storing and cooling TCS food items to continue operating until re-inspection. Let PIC know the walk-in and prep table have to be repaired within 24 hours of the re-inspection, or another two door reach-in cooler will need to be purchase to maintain operation. Discussed MCESD's 24 hour re-inspection policy for adequate cold holding capacity for facility. Equipment used for cold holding must be able to have the capacity to properly maintain all TCS food at 41F or below. Instructed PIC to not store any TCS foods in unit until the unit is repaired and holding at 41F or below. Corrective Action: Correct prior to re-inspection 8/14/2026.
