No County legal action will result from this inspection.Establishment has a RO water purifier system in the back kitchen area of the business near the hot wash heater and prep sink. Explained to PIC, if the owner wishes to keep the RO system, then a RPZ (ASSE1013) will need to be installed. If the owner, wants to remove theRO system part of the water purifier then a RPZ will not be needed. Inspector will follow up at the next routine inspection.

Observed cups in the mechanical dishwasher with chlorine concentration of 25 ppm. Cups were moved to 3 compartment sink to be sanitized there at the time of inspection. Additionally, PIC called technician to have unit serviced.Chrlorine concentration shall be between 50 and 100 ppm for food contact surfaces. Corrective Action: Corrected at time of inspection.

Per PIC, items had been in prep table less than 2 hours and is only open for 3.5 hours before closing until dinner hours. PIC said they will toss what is left over at the end of lunch. TCS foods shall be held at 41 degrees Fahrenheit or below to prevent microbial growth, or a Time a control policy should be developed. Correct By: Corrected At Time Of Inspection
