Inspector's notes

Observed cooked noodles tightly covered with plastic wrap located in the walk-in cooler. As per PIC, the noodles were prepared today, less than 2 hours prior to the inspection, and placed in the walk-in to cool. The internal temperature range at time was 69F-71F. Explained to PIC, that she should not be covering food items, that are actively cooling; until after the food has reached 41F or below. Once the proper temperature of 41F or below is achieved, the food item can be covered. PIC removed some of the plastic wrapping from the cooked noodles, to continue cooling to 41F or below. Foods must be cooled from 135F-70F in the first 2 hours and from 70F-41F in the next 4 hours for a total of 6 hours. Corrective Action: Corrected at time of inspection.

Observed a hose, scrub brush, and soap dispenser in the basin of the hand wash sink located near the 3 compartment sink. PIC removed all the items from the hand wash sink basin. Observed breaded cooked chicken, and eggs rolls located in the walk-in cooler without a date mark. Per PIC, the items were prepared a day before the inspection, over 24 hours. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.
