Inspector's notes

Observed cheese danishes, several cupcakes and cream filled cookies with buttercream frosting and cinnamon rolls with cream cheese frosting out at an ambient temperature of 76*F. Per Person in Charge (PIC) classic vanilla and red velvet cupcakes were on display for more than 4 hours and the cheese danish, cream filled cookies and the cinnamon rolls were on display for less than 4 hours. Discussed with PIC except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC voluntarily discarded classic vanilla and red velvet cupcakes. The cheese danishes, cream filled cookies and the cinnamon rolls were relocated to refrigeration to properly cool to 41*F or less. Provided PIC information to utilize Time as Control for future use. Corrective Action: Corrected at time of inspection.

E&D, class 2 10+OC inspection was conducted with the owners, Celeste F. and partner. The establishment is not open and operating. The facility is remodeling to add coffee bar at the front service. No food service at this time. Remodel includes new floor finish, new partition walls, new paint finish.Permit is not approved.A minor remodel permit will be created to address the new drink service area.The following items were discussed:1. Provide a food prep sink with indirect drainage to the grease interceptor.2. Provide FRP on wet walls, semi-gloss paint on other walls. Please use light color.3. Provide a reduced pressure zone (RPZ) assembly (ASSE 1013) at the water connection point of the RO system. Conduits and fittings after the RPZ must be stainless steel or PEX. Do not use copper or brass alloys downstream of the RPZ. Provide a drain cup for the vent port of the device. Drainpipes must be rigid and indirectly discharge to a floor sink with minimum 1” air gap from the finished floor. Certify the device and provide report.4. Provide a vented dual check valve (ASSE 1022) at the water connection point of the coffee/ tea brewer and espresso machine. Please use stainless steel valve.5. Provide 1” air gap below the base of the 3-comp sink.6. Provide a back water valve in between the food prep sink and the grease interceptor.7. Replace the mop sink’s faucet. It is not working.8. Provide metal cove base at walls/ floor junctures of the hood.9. Seal the back of the hood to the wall. There is a 1/8” to ½” gap from hood to wall backsplash.10. Provide washable ceiling tiles in work zone and restroom.11. Provide covered trash can for the restroom since it will be used by women.12.
