New permit inspection for a processor Class IV. Operator is not preparing food at this time but restaurant is open. Tacos will be sold from the cart: Meat will be cooked at the restaurant and transported hot onto the cart. All other items,tomatoes, cilantro, cabbage, tomatillo, onion, salsa will be cut and processed at the shared kitchen.Push cart will have a hot well and space for the coolers for cold holding.Cart will have a hot plate for the prep of the taco'sCart Permit # is MF-23-1072On the push cart at location food can be assembled and sold.All foods sold on the cart that must be prepared in the shared kitchen under the processor permit or from an approved source. Food production is in conjunction with a Class II Pushcart and commissary agreement.Owner is required and will take the Food Service Manager test.All equipment used, and utensils will need to be washed in the commissary. No food storage or washing of dishes at home allowed.When operating with the pushcart make sure that you carry a copy your processor permit with you and your commissary log sheet.This establishment is not participating in the award program at this time and had 0 Priority, 0 Priority Foundation violations on this inspection.This establishment/operation has been evaluated and qualifies for the issuance of the permit.
