Except during preparation, cooking, cooling or when time is used as a control all time/temperature control for safety (TCS) foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Person in charge stated that foods had been in reach-in cooler since the day prior. All TCS foods improperly cold held were discarded by PIC at time of inspection. Observed food worker not utilizing proper hand wash procedures. Employee used the three compartment sink to momentarily dip hands in soap and water, then clean water to rinse, and then in santizer solution. Discussed with employee proper hand washing and to use the designated hand wash sink. Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination.

The person in charge stated the food containers were employee personal foods but that the fresh vegetables were for use by the establishment for food service. Discussed storage and separation of employee personal foods to protect from contamination. The person in charge moved all employee food to designated area away from food used for food service. Frozen product is made with meat. Facility advised that selling frozen product requires a food processing permit. Facility will cease sale of frozen product. This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2.
