Observed 0 ppm Quat sanitizer in the 3-compartment sink actively being used at time of inspection. Quat sanitizer should be between 200-400ppm to ensure the dishes are properly sanitized. The sanitizer was remade by hand and will be done as such until a professional technician services the dispenser. Corrective Action: Corrected at time of inspection.

Observed meatballs in tomato sauce in hot holding on the cook line at a temperature of 70*F, per PIC had been there for an hour and 40 minutes. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.
