Cooked shredded chicken with different flavors held at 51 degrees F in three containers in line reach in cooler in cook line. Chef stated items were portioned and bagged less than an hour ago. Items were placed in ice bath in walk in cooler for rapid cooling and reached proper temperature. Corrective Action: Corrected at time of inspection.

In a walk-in cooler, chicken wings cooked yesterday with a date marked of 7/13/25 hold at 47-48 degrees F. Ham shredded yesterday and portioned in small containers has an internal temperature of 47 degrees F. Cooked meatballs from packaged bags defrosted yesterday have an internal temperature of 47-48 degrees F. Cooked ground beef and ground sausage yesterday had an internal temperature of 47-48 degrees F. Food items are in containers with lids on and stacked on top of each other, and stored next to the door of the walk-in cooler. Items were discarded by manager. Advised for cooling food rapidly, store them in the back of the walk-in cooler uncovered and not stacked on each other until the internal temperature reachs to 41 degrees F.
