Inspector's notes

Observed marinara sauce (internal temperature: 68F) being cooled in deep containers in the 3-compartment sink. PIC stated that the marinara sauce finished cooking about 2 hours ago. Observed soup and short rib cooling in the walk-in cooler with aluminum foil and plastic wrap covering the pan (internal temperature: 95-105F). The pan itself exceeds a depth of 4 inches. PIC states that those items were placed in the cooler 1 hour ago. Informed PIC that TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods cooling were uncovered and transferred to shallow containers to allow for rapid cooling. Corrective Action: Corrected at time of inspection.
