An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action.Recommend: monthly-bi annual maintenance on main walk in unit. Lowering Quat Ammonia sanitizer concentration at three compartment sink. Using high temperature dish machine log.

Observed multiple times that in use high temperature dish machine is not able to sanitize properly. Inspector and establishment min max reached 108*F-145*F after 6 times. Notified Person In Charge (PIC) that unit rinse is not able to reach high temperature of 160*F to properly sanitize food contact equipment. PIC will close down unit until repaired. Establishment will re-wash and re-sanitize containers and other food contact equipment. 2nd Consecutive violation. Corrective Action: Corrected at time of inspection.
