Inspector's notes

Observed under the counter fridge holding TCS foods with internal temperature above 41*F. TCS food items include 6 packaged pizzas (47-50*F), packaged sliced American cheese (47*F). Refrigeration unit has an ambient temperature of 47*F, establishment has adequate refrigeration. Staff stated that sliced cheese and 2 pizzas had been in the unit since the day prior. All TCS foods improperly cold held for more than 4 hours were discarded by PIC at time of inspection. PIC stated the other 4 pizzas were put in unit approximately an hour ago, and were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Observed fridge next to hand wash sink to have an ambient temp of 50*F. Staff keeps temperature log that recorded that the unit's digital thermometer displayed 38*F at 2pm day of inspection. Pizza that was stored in unit had been placed in unit 45 minutes prior to inspection and was relocated to properly working unit. All equipment must be maintained in good repair at all times. Staff contacted repair company to fix unit and will not use the unit until repaired. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
