#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed TCS foods in walk-in fridge to have an internal temperature above 41°F. TCS food items include key wot (49-51°F), alcha wot (52°F), mishar wot (51°F), mkeyel (53°F), raw beef (52°F), and hard boiled eggs (52°F). Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC stated that food items had been in unit since the day prior and that the unit was working yesterday. Upon questioning PIC was looking at the temperature the unit is set to, not the ambient air temperature. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Correct prior to next routine inspection.

Observed walk-in fridge to have an ambient temperature of 47-52°F measured 3 times with min/max thermometer. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Establishment relies heavily on walk-in fridge to operative. Establishment has 1 stand up freezer, coke beverage fridge, and under the counter refrigeration in bar that will be used to store TCS foods until walk-in is repaired. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection. 24 hour re-inspection schduled.
