Inspector's notes

Observed TCS food being held in the pizza prep-unit with an internal temperature of 48-52*F. Internal temperature registered with an internal probe thermometer. Ambient temperature of unit registered 54*F with a min/max thermometer. TCS food items included tomato sauce, shredded cheese, cut tomatoes, peperoni slices, and ground sausage meat. Per PIC all food had been in unit for under 4hrs at time of inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Educated PIC that no TCS food items can be placed in the unit until it is repaired to maintain temperatures at 41*F or less. Second consecutive violation. Corrected at time of inspection.

Observed dried food debris behind the blade on a deli slicer. Per employee, the deli slicer was last used the day before to slice deli meats. Educated PIC that all food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrected at time of inspection.

Ambient temperature of unit registered 40*F with a min/max thermometer. Per employee, all chicken was prepared and placed in unit the day before inspection date. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Ranch dressing and salsa with internal temperatures between 52 degrees F and 60 degrees F are cold holding in metal containers in an ice bath on the server line. Spoke with PIC and recommended filling the ice level to the product inside the containers to keep all TCS items below 41 degrees F. PIC directed associate to refill the ice.
