Observed a soda dispenser gun behind the bar with visible soda syrup accumulation inside the nozzle. Educated PIC that the soda dispenser is a food contact surface and should be wash, rinsed, and sanitized daily. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed a cold holding unit containing salsas, creamy cilantro sauces, ranch dressing, and house dressings. Internal temperature was taken with probe thermometer registered at 51*F. According to PIC food was placed in cold holding unit an hour previously for service. Ambient temperature of unit was taken using min/max thermometer, registered at 56*F. Educated PIC that all cold holding units must maintain 41*F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. PIC called for maintenance to repair the unit. Corrected at time of inspection.
