Observed pork buns cold holding at internal temperature of 52 deg F. The cooked pork buns were cold holding in a portion of the reach in retail unit holding at >41 deg F and Manager informed that portion of bottom shelving is primary used for holding non TCS foods. Manager informed the pork buns had been cold holding a short time prior and placed in walk in for rapid cooling. Corrective Action: Corrected at time of inspection.
