Discussed replacing or sanding the cutting boards in order to prevent the migration of loose plastic onto food and to ensure that the surface is smooth and easily cleanable. Observed cutting surfaces at the prep counter across from grill with broken corners, leaving layers of uncoated and porous surfaces exposed. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Core-5-205.15 (B), C: System Maintained in Good Repair; Maintained 1) Replace the dual check valve (ASSE 1022) backflow preventers if they haven’t been replaced within a year. Provide the invoice. Dual check valves are located behind the iced tea brewers. Ensure each brewer that is connected to a water line has an ASSE 1022 backflow device. 2) Label each backflow device within the ice machine room. 3) Provide a hard pipe for the black flex line under the ice machine. Ensure all drain line have a 1-inch air gap above the floor sink. 4) Test and certify all backflow devices and provide the test reports. Correct By: Correct Prior To Reinspection

Most notably in the dish pit area and in the walk-in cooler. 2) Remove/replace rusted shelves in the walk-in cooler. 3) Fix the flow for both the hot and cold water for the 3-compartment sink. 4) Repair/replace the pre-rinse sprayer spring. Pre-rinse sprayer is being held up with a string. 5) Provide the missing baffles to the hood. 6) Detail clean the floors, walls, ceilings, equipment and under equipment throughout the establishment. 7) Fill/seal in the gap behind the service expo drink station. Silicone the sides. 8) Observed walk-in freezer with a build of ice under the fans. Repair the water leaking near the fans. 9) Swap the kegerator system and prep table at the bar. Kegerator system must drain into a floor sink. Provide a rigid drain line. Draining into a bucket is not approved. Correct By: Correct Prior To Reinspection
