Inspector's notes

Observed chemical dishwasher in use to wash plastic trays. Upon completion, the dishwasher tested at 0 ppm of chlorine. Manager attempted to prime dishwasher. The following cycle was >200ppm of chlorine and all subsequent cycles were testing <50ppm of chlorine. Discussed repairing dishwasher. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Manager posted the dishwasher out of service and instructed all staff to hand wash dishes in the 3-compartment sink with available sanitizer until further notice. Corrective Action: Corrected at time of inspection.

During time of inspection, manager on site said that the dishwasher was repaired the day prior to the inspection but had not been used or tested the day of inspection. The Do Not Use sign that was previously posted was removed, and a rack was observed next to dishwasher. Dishwasher test 0 ppm after several runs and attempted priming by manager. Discussed ensuring that the dishwasher is posted with a "Do Not Use" sign until it is verified functional, and to ensure routine verification of the sanitizer levels in the dishwasher.

Inspector's notes

Observed sanitizer concentration of 0ppm in dishwasher after several runs. On final run attempt, dishwasher displayed an error stating that there was no sanitizer and no available staff was able to troubleshoot the error. Manager at time of visit posted a sign to not use dishwasher and directed staff to only use 3-comp sink for ware washing until dishwasher is serviced. Discussed the importance of proper monitoring of sanitizer levels. Corrective Action: Corrected at time of inspection. ***Third Consecutive Violation*** This was the third consecutive violation. A re-inspection for the dishwasher is scheduled for 2-7-25.
