Observed employee switch between retrieving used dishes from the dining area to removing dishes sanitized in dishwasher to dry them. Advised employees to wash hands and change gloves between tasks. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee proceeded to wash hands and properly sanitize dishes. Corrective Action: Corrected at time of inspection.

Observed Items in walk-in such as sliced turkey, milk, sliced ham, sliced cheese, coleslaw prepared a day more or prior improperly cold holding between 43-45*f degrees. Observed cut lettuce over filled on cookline holding at 48*f degrees. Observed prepared corn beef with potatoes sitting out on cookline with an internal temperature of 50-60*f degrees. Chef stated item usually gets left out. Explained that unless on a time control policy this item needs to be held below 41*f degrees at all times. Chef stated item had been out 3 hours. walk-in confirmed working at 35*f degrees via min/max, all items located to walk-in at time of inspection. Correct By: Corrected At Time Of Inspection
