Inspector's notes

Observed chicken and steak holding 51-56F. The products were stored in rubber bowls. Discussed removing them from the rubber, to allow for proper air flow. The products were held in a refrigerator holding 45F. PIC removed them from the refrigerator, as it requires service and had the lids open for a less than an hour. The items were moved to the walk-in to cool to 41F. Corrective Action: Corrected at time of inspection.
