In the cold tables on either end of the cooks line, observed raw eggs being stored above RTE sauce. In the reach-in under the middle cold table observed raw chicken stored above herbs and garlic. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Observed two large, covered metal containers with house-made sauce cooling in the walk-in cooler with an internal temperature of 73-74 degrees F. PIC stated items were cooked about an hour prior. Loosely covered both containers of sauce in the walk-in at time of inspection. In the middle cold table observed cooked chicken with an internal temperature range of 62-68 degrees F. PIC stated items were cooked two hours prior and placed in cold table. PIC relocated chicken to the walk-in to cool uncovered. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection. Cooked potato masala piled high above the rim of a pan in the top of the cook line cold table at 48*F internally. Manager stated it had been held as such less than two hours. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

Corrective Action: Corrected at time of inspection. Employee washed hands then dried them on cloth towel, employee dried hands with their apron. Had employees rewash hands properly. Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination.
