Observed the following time/temperature controlled for safety (TCS) with internal temperatures between 47*F-54*F in the right refrigerated prep unit on line: cooked mushrooms, cooked lamb, cooked chicken, pre-cooked bacon, and feta. Person-in-charge (PIC) indicated these foods had been in unit since 9:00AM, but PIC had verified the internal temperatures of food items at 10:15AM were at 41*F. The measured ambient temperature of the unit was 55.4*F on top, and 52.8*F on bottom. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Please address the following items prior to the next OC re-inspection within 15 days: 1) Observed an ASSE 1015 double check backflow preventer installed for the soda system. This is not approved. Please install an ASSE 1013 reduced pressure backflow preventer. Certify and provide a test report. Ensure no copper or copper alloys are downstream of the backflow preventer. 2) Provide a splash guard to the right of the kitchen handwash sink to prevent contaminating the prep sink. 3) Observed beverage and dessert items that packaged and retailed for consumer grab and go without labels.
