Inspector's notes

Observed active warewashing in dish machine in main kitchen test at 0ppm of chlorine sanitizer after multiple runs. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC relocated all food-contact surfaces to three-compartment sink with approved sanitizer concentration to be washed, rinsed, and sanitized at the time of inspection. PIC stated a work order will be placed to repair dish machine and that three-compartment sink will be used until dish machine is repaired. Corrective Action: Corrected at time of inspection. Repeat violation (2nd consecutive).

Observed floor drain next to main dish machine overflowing on to floor and not draining properly. Observed handsink at bar not properly drain and grey water from handsink come up from drain into adjacent dump sink. All plumbing must be maintained in good repair at all times. PIC was able to have employee repair drains/piping. Floor drain and both sinks observed to be properly draining and not backflowing at time of inspection. Corrective Action: Corrected at time of inspection.
