Observed no written policy provided for clean-up of vomiting and diarrheal events. Observed no vomit/fecal clean-up kit available at time of inspection. Provided PIC with Maricopa County Environmental Services Department Vomit/Fecal cleanup guidance at time of inspection. Written procedures for clean-up of vomiting and diarrheal events is required onsite at all times. Chemical agent that can kill norovirus is required onsite at all times. Corrective Action: Correct prior to re-inspection. Re-inspection will occur on 5/15/2026.

Inspector's notes

Observed prepped chopped lettuce in the walk-in with a temperature reading of 51*F. PIC stated that it had been prepped then placed back in the walk-in for six hours. TCS foods prepared from cold or ambient room temperature ingredients must be cooled from 70°F to 41°F within 4 hours. All TCS foods improperly cooled were discarded by PIC at time of inspection. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
