Inspector's notes
Observed rolled tacos and fried tacos with an internal temperature of 45-47*F in walk-in unit. Internal temperature was taken with internal probe thermometer. Per PIC all food was cooked the night before, placed in greater than 4in plastic containers with sealed lids, then placed in walk-in unit. PIC could not verify times when food reached 41*F. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrected at time of inspection.

Inspector's notes
Observed a walk-in unit with an ambient temperature of 46.2*F. Walk-in unit then decreased to 32*F during the duration of the inspection. Due to wild temperature fluctuations, educated PIC the unit may not be calibrated correctly. PIC stated they will call maintenance to adjust walk-in to maintain 38-41*F. Correct prior to next routine inspection.
