SECOND CONSECUTIVE. Observed the bar dishwasher with chlorine sanitizer measuring at 0 PPM. Also observed a leak from the base of the dishwasher. Confirmed dishes had been washed today. Staff stated they had been having trouble with that dishwasher recently and had it serviced three weeks ago — staff to test the sanitizer strength on the first cycle of dishes daily. Management was alerted and plans to use the main dishwasher to sanitize dishes until the bar dishwasher can be serviced. Reviewed sanitizer concentration requirements. Corrective Action: Corrected at time of inspection.

Cook stated the chili relleno had been cooked one hour prior. Alerted manager who moved the chili relleno to the freezer to quickly cool at time of inspection. Only commercial grade equipment is permitted for TCS food items. Remove the small home style refrigerator from the kitchen. 3. There is a flex drain pipe for the hand sink at the east end of the bar and a garden hose for the dipper well drain pipe in the ice machine area. Provide hard pipe drain lines such as PVC for these fixtures that drain to floor sinks with minimum 1 in. air-gaps between the ends of the drain pipes and the flood rims of the floor sinks.
