Observed blackish-greyish build-up on the ceiling of the walk-in and the floor of the freezer. Also observed food debris building up in the back corners of the dry storage area. Physical facilities must be cleaned frequently enough to prevent the accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Observed a sanitizer bucking in the basin of the server's dinning-room handwashing sink. Alerted manager and removed the bucket from the sink. Observed white gravy (111°F), brown gravy (115°F) and grits (108°F) hot holding below 135°F. The hot hold steamer had been over filled with water causing the pans to float up and release steam from the top of the unit. Staff stated the foods had been in the unit for less than 4 hours. Excess water was removed from the unit and staff reheated the foods to 165°F and returned them to the hot holding unit. Discussed fill lines and functionality of the hot hold steamer. Observed cooked green beans measuring at 85°F after three hours cooling. The green beans were in a deep pan on the side of the walk in next to other larger pans. Alerted manager who had the cook reheat the green beans to 165°F and then hot hold them for dinner service. Discussed keeping temperature logs to identify when items start the cooling process. Time Temperature Control for Safety (TCS) foods must cool from 135°F to 70°F within 2 hours and from 135°F and 41°F or less within a total of 6 hours.
