Inspector's notes

Prep cooler found with TCS food items ranging in temperatures between 45-49*F in both top and bottom portions of the cooler. Ambient temperature of the cooler was 49-50*F. PIC stated the food items were placed in the cooler this morning around 10 AM and the temperature had not been checked since then. PIC discarded the TCS food items in the cooler (see embargo form). Cheese was still cold and moved to the walk-in for continued cold holding. Ice bath or time as a control will be used for TCS items on the make-line until the cooler is repaired/replaced.

-- Observed opened container of aged cheddar cheese sauce out on prep table with an internal temperature of 76°F using probing thermometer. An employee stated the sauce was removed from refrigerator to prepare an order approximately 45 minutes prior to the inspection and was accidentally left out. At the time of inspection, the cheese sauce was placed in the walk-in refrigerator to rapidly cool to 41°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
