#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed an ambient air temp of 65*F in the beverage cooler on the cook line when measured with a mix/max thermometer. Inside the cooler, observed cooked shrimp, bbq pork, pork ribs and noodles with internal temperatures ranging from 60-66*F. PIC stated the shrimp and noodles had been in the cooler overnight and all other food were removed from the walk in at 11am. The shrimp and noodles that were improperly cold held were discarded by PIC at time of inspection. All other TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Per PIC, the chicken was cooked at opening at 11am. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Discussed prep coolers are not intended to cool TCS foods. PIC moved the chicken to the walk in cooler at the time of inspection. Corrective Action: Corrected at time of inspection.
