Inspector's notes

Observed the cook place raw shaved steak on the flat top grill before handling a clean plate, hand a bottle of salad dressing, and cheese without removing gloves and washing their hands. PIC discarded the foods and moved the plate to the dishwasher at the time of inspection. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee properly washed hands at handwash sink at time of inspection. Advised PIC to utilize tongs or other effective barriers to minimize the need for handwashing. Corrective Action: Corrected at time of inspection.

Observed a small plastic container of diced tomatoes and large plastic container of cut lettuce in the cold top next to the grill with a probed internal temperature of 45-46 degrees F. Person in charge stated the items were prepped that morning and put in the cold top less than an hour prior. Advised person in charge once ingredients are prepped to put in the walk in to cool back to 41 degrees F prior to moving the items to the cold top. Person in charge moved the items to the walk in to cool. Corrective Action: Corrected at time of inspection.
