#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

In the dining area refrigerator, TCS foods such as baked beans, baked pasta, corn dogs, and cooked cauliflower had internal temperatures of 47-50*F. The person in charge (PIC) verified the temperatures with the establishment's thermometer. The PIC did know how long the food items had been out of temperature. The food items were embargoed and voluntarily discarded by the PIC at the time of inspection. Instructed the PIC to not use the unit until it is repaired/replaced.

Inspector's notes

Observed rodent droppings throughout the kitchen area and the dining room area. The person in charge (PIC) was shown the droppings. The PIC stated they will utilize disposable dishes/utensils until issue is addressed. The PIC was instructed to clean and sanitize all dishes and equipment and remove all droppings from the kitchen. The PIC was instructed to contact the pest control company to address the issue. A re-inspection will be conducted in 10 days. Please ensure pest control receipts are available prior to re-inspection.
