Observed designated hand sinks at the warewashing area and service window with visible dried food debris on the basin at time of inspection. Discussed hand sink requirements with PIC. Ensure all dumping occurs in approved sinks. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC will ensure establishment discontinues use of handwash sink for all activities that are not for handwashing. Observed 0 ppm chlorine in sanitizer bucket located in back of house. Notified person in charge and had employee remake bucket of sanitizer to 50-100 ppm at the time of inspection. Chlorine sanitizer levels must be between 50- 100 ppm. Discussed the importance of proper sanitizer levels with the PIC. Corrective Action: Corrected at time of inspection. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Burritos in the bottom container were at 56°F. The lids on the bottom containers were rotated to allow for air circulation in the bottom containers.
