Inspector's notes
Observed orange chicken in the hot holding unit in the front with an internal temperature ranging from 101-128°F. Person in charge stated that the chicken has been placed in the hot holding unit for 1 hour 30 minutes. Informed person in charge (PIC) that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were voluntarily discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.
