Observed cutting boards on the cook line that were heavily scarred and stained from knife usage and food contact. Discussed with Chef that the boards should be smooth and free of cracks and crevices. At time of inspection, observed a large container of cooked taco meat in a deep plastic container cooling in the walk in cooler. Upon initial inspection, meat was between 85*F and 145*F. Per cook, the foods had started cooling approximately an hour and a half ago. Foods were moved to 2 shallow metal pans with ice on top. By the two hour mark, one pan was between 60-70*F and the other was between 65-80*F. The pan that was still over 70*F was embargoed. All temperature controlled for safety (TCS) foods must reach 70*F or below within the first two hours of the cooling process. Discussed cooling methods with manager.
