All time/temperature controlled for safety (TCS) foods in cold holding must be kept at 41*F or below. Unit was holding at 47*F on inspectors min/max thermometer. All foods that were in the unit less than 4 hours were moved to the walk in cooler to cool. All foods in there from the night prior were embargoed. Dishwasher concentration must be kept at the proper concentration as stated on the bottle. Discussed testing of the dishwasher and concentration levels with managers.
