Observed the dishwasher in the main dish area was below 50 to 100ppm and the bar dish washer was at 0ppm at time of inspection. Person in charge (PIC) mentioned chemical company was just out to work on the units. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC switched to the three compartment sink at time of inspection and will not use the dishwashers until they can maintain the proper 50ppm to 100ppm. Observed Pico de Gallo, pineapple salsa containing tomatoes, precooked pork, chicken, and beef tacos, cut lettuce, and cheese (shredded and sliced cheddar) in the prep table across from the fryers with temperatures between 49 to 50*F at time of inspection. Per person in charge (PIC), all items were placed in the prep table less than 2 hours prior to inspection and were moved to walk-in cooler to rapid cool at time of inspection. Observed ambient temperature of the prep table at 49.4*F with a min/max thermometer at time of inspection. Observed establishment with multiple working reach-in coolers/freezers, walk-in cooler, and prep table capable of keeping TCS food items at 41*F or below. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Observed bartender wash hands with soap and then shake hands out and go to scoop ice for a drink for a customer without properly drying hands at time of inspection. Observed employee change tasks from filling the dishmachine to go run food to a customer, rinse hands off for 5 seconds with no soap, and dry hands on a reusable towel on the bar counter at time of inspection. Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination. Employees properly washed hands at handwash sink at time of inspection. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Observed chemical dishwasher in kitchen with a chlorine concentration of less than 50 ppm chlorine at the time of inspection. Person in charge (PIC) ran the machine additional time and no chlorine was observed from the run. Establishment instructed not to use dish washer until it has a measure chlorine concentration of 50-100 ppm. Establishment agreed to not utilize dishwasher and to only utilize the dishwasher at the bar near the entry until the unit can be fixed.
