Observed 6 bags of precooked noodles measured between 48F and 55F in the single door reach in cooler. The person in charge indicated the noodles were in the unit overnight. The noodles were discarded at the time of inspection. Observed cut cabbage measured at 46F in the single door cooler across from the flat grill. The person in charge indicated the cabbage was in the cooler for 30 minutes. The cabbage was relocated to the walk-in cooler.

In the vegetable reach in cooler by the wok station, observed raw beef at 47*F. All cold holding Temperature controlled for safety (TCS) foods must be kept at 41*F or below. Foods were placed in unit 3 hours prior and were placed back in the walk in cooler to cool. Unit was repaired this morning and not enough time was given to allow the unit to reach 41*F before placing TCS foods inside. Correct By: Correct Prior To Next Routine Inspection
