Inspector's notes

Upon arrival, observed the cheesecake in the bakery display case with no time stamp. Observed an employee adding a time stamp that was labeled 2 hour prior to the current time (10:30am). Also observed bread with cheese filling with a time stamp. The PIC was asked to provide a 4 hour time policy, but did not have it available. Inspector wrote a new policy and emailed it to the Operator. TCS food items on time as control must be indicated as such in the 4-hour time policy. Corrective Action: Corrected at time of inspection.

PIC stated that the desserts get picked up by another store called "Linda" to be sold there. Discussed requirements for a food processor permit and emailed the weblink to apply for the permit if this practice continues. PIC stated he will not sell the desserts to other establishments. ***Observed a flan and cheesecake product produced by "Dulce Paraiso Desserts" a phone number was listed on the label. Contacted Operator and during the conversation, the call was dropped." PIC at Carniceria Del Rancho stated that this Operator has elected not to continue selling the items. ***Created a 4 hour time policy for the cheesecakes if staff wishes to store the cheesecake outside of room temperature instead of cold holding.On July 1st, 2023, the Environmental Services Department started emailing permit card(s) and permit invoice(s) to permittees.
