Observed carnitas at 52F that had been cooked the previous evening. The carnitas were placed in the walk-in refrigerator, but had been placed on the bottom of the cooling speed rack and had been covered with plastic. Discussed proper cooling methods with the PIC. PIC discarded the product. Cooling must occur once food temperatures reach 135F. Temperatures must drop to 70F within 2 hours, and 41F after another 4 hours.

Observed bags of hominy at 64F stored in an open case in the retail food isles. PIC stated the hominy was cooked this morning and placed into those bags. PIC moved all the bags to the freezers to rapidly cool the item. TCS food must be cooled from 135F to 70F within 2 hours, and from 70F to 41F after 4 hours.
